We are replacing the intensively produced, the homogeneous varieties, the inhumane practices and the unnecessary waste, with the regenerative, the natural, the harmless and the wild, restoring an essential sense of connection with our food sources.

Ingredients are selected from small-scale farms, foragers and independent producers who use regenerative and minimal intervention methods.
We seek out the unfamiliar, elevate the ordinary, celebrate the whole and embrace creative ‘root-to-fruit’ preparations to ensure minimal waste.

Like our food, all our wines are vegan, and most are either organic or natural or both, made by low intervention wine producers in the UK and EU (we do not buy outside the EU).
Our wine on tap comes in returnable and refillable kegs to reduce glass use, wastage and energy. Our bottles are also refillable and returnable.
Our homemade juices and cocktails are also vegan and made in house using seasonal and zero waste ingredients from the kitchen.
We source beers, ciders and spirits from local producers who share our ethos and use sustainable ingredients and processes.

The design of the restaurant interiors reflects our alternative approach. An exercise in adaptive re-use and minimal intervention, it showcases sustainable materials, slow and low waste methods of construction and concepts of circular design.
